¼ cup soy sauce

4 cloves garlic, smashed and sliced
2 tablespoons grated ginger
1 heaping tablespoon orange zest
1-pound salmon fillet
4 cups red grape or cherry tomatoes
3 large garlic cloves, unpeeled
¼ cup extra-virgin olive oil
¼ cup warm water
1 teaspoon fresh lemon juice
1 teaspoon salt
¼ teaspoon black pepper
2¾ cups chicken broth
2¼ cups pearl couscous
1 tablespoon olive oil
½ cup black olives, pitted and chopped
⅓ cup chopped fresh flat-leaf parsley
¼ cup chopped fresh mint
1 teaspoon chopped fresh thyme
1. Whisk the soy sauce, maple syrup, garlic, ginger, and orange zest together in a small bowl.
2. Place the salmon fillet in a resealable plastic bag and pour in the soy mixture.
3. Close the bag, place it onto a plate, and store it in the refrigerator for at least 4 hours, preferably overnight.
4. Preheat the oven to 250 degrees.
5. Halve tomatoes and arrange cut sides up in a single layer on a large baking pan with the unpeeled garlic.
6. Roast in the middle of the oven for about 1 hour.
7. Let the tomatoes cool in the pan on a rack for 30 minutes.
8. Squeeze roasted garlic out of its skin and puree with olive oil, water, lemon juice, salt, pepper, and ½ cup roasted tomatoes in a blender until dressing is very smooth.
9. Bring the chicken broth to a boil, stir in couscous, and simmer, uncovered, for 6 minutes.
10. Cover pan and remove from heat. Let stand for 10 minutes.
11. Preheat your broiler and remove the salmon from the bag discarding the garlic.
12. Place onto a baking tray and broil for 8 minutes on each side or until cooked through.
13. Transfer couscous to a bowl and stir with the dressing, roasted tomatoes, olives, parsley, mint, thyme, salt, and pepper to taste.
14. Serve salmon with couscous and enjoy.
