Cashew-Goji Berry Bars

Ingredients:

½ cup pitted dried dates

½ cup pitted prunes

2 tablespoons hot water

1 ½ cups raw cashews

1 tablespoon creamy cashew butter

¾ dried goji berries

½ teaspoon vanilla extract

½ teaspoon fine sea salt

Directions:

1Mix the prunes, dates, and hot water in a food processor, until it becomes a thick paste-like consistency. This should take about 20 seconds. Add the cashew butter and cashews to the mixture. Process until it is all combined and the mixture appears smooth, which should take about 1 minute. Add salt, vanilla, and goji berries. Pulse the food processor until the berries are combined but in larger chunks. 4 or 5 pulses should do it.

Dump the mixture onto a piece of parchment paper. Roll the mixture into a large rectangle about ½ inch thick. Then cut the large rectangle into 8 smaller bar shapes. Place the bars in the refrigerator until they are firm, which should take about 1 hour.

To store them, you can keep the bars between pieces of parchment paper in an airtight container on the kitchen counter at room temperature for up to 2 days. Or if you want to make them last longer, you can keep the bars in the fridge for up to 1 week.
